Get ready for a delicious Breakfast or Brunch! This recipe is perfect for eating seasonally, and for the “Moon”/Follicular phase.
Autumn Breakfast Casserole — serves 6
Ingredients:
- 4 oz bella or crimini mushrooms chopped
- 1-2 potatoes diced
- 1/2 red bell pepper diced
- 1/2 med onion diced
- 2 tbsp olive oil
- Salt and Pepper to taste
- 1/2 pound sausage
- 2 cloves garlic minced
- 1 large handful kale or spinach chopped
- 8 eggs
- 1/3 cup half n half or milk
- 2 tsp Old Bay Seasoning or to taste
Directions:
- Heat oven to 400 degrees F.
- Grease or line with parchment paper a 9×9 baking or cassarole dish.
- Place all of the vegies (except the kale/spinach) in a large bowl and toss with the olive oil. Spread on large baking sheet and season with salt and pepper. Roast 20-25 minutes until potatoes are tender.
- Brown the sausage. Add the kale/spinach and garlic. Saute’ a few more minutes. Place mixture into the prepared baking dish.
- Whisk together eggs, milk, Old Bay seasoning, and 1/2 tsp salt 1/4 tsp pepper in a mixing bowl.
- Pour the egg mixture over the sausage mixture in the baking dish.
- Bake uncovered 30-35 minutes or until center is solid and butter knife inserted in the center comes out clean.
- Allow to rest 10 minutes. Serve hot. Will keep in the fridge up to 3 days.
