Autumn New Moon Recipe

Get ready for a delicious Breakfast or Brunch! This recipe is perfect for eating seasonally, and for the “Moon”/Follicular phase.

Autumn Breakfast Casserole — serves 6

Ingredients:

  • 4 oz bella or crimini mushrooms chopped
  • 1-2 potatoes diced
  • 1/2 red bell pepper diced
  • 1/2 med onion diced
  • 2 tbsp olive oil
  • Salt and Pepper to taste
  • 1/2 pound sausage
  • 2 cloves garlic minced
  • 1 large handful kale or spinach chopped
  • 8 eggs
  • 1/3 cup half n half or milk
  • 2 tsp Old Bay Seasoning or to taste

Directions:

  1. Heat oven to 400 degrees F.
  2. Grease or line with parchment paper a 9×9 baking or cassarole dish.
  3. Place all of the vegies (except the kale/spinach) in a large bowl and toss with the olive oil.  Spread on large baking sheet and season with salt and pepper. Roast 20-25 minutes until potatoes are tender.
  4. Brown the sausage. Add the kale/spinach and garlic. Saute’ a few more minutes. Place mixture into the prepared baking dish.
  5. Whisk together eggs, milk, Old Bay seasoning, and 1/2 tsp salt 1/4 tsp pepper in a mixing bowl.
  6. Pour the egg mixture over the sausage mixture in the baking dish.
  7. Bake uncovered 30-35 minutes or until center is solid and butter knife inserted in the center comes out clean. 
  8. Allow to rest 10 minutes. Serve hot.  Will keep in the fridge up to 3 days.
