This is one of my favorite autumn season vegetable salads and it is a perfect dish for the “Moon”/Ovulatory phase.
Aries Full Moon Recipe:
Roasted Autumn Vegetable Salad
Ingredients:
- 4 cups brussel sprouts trimmed and cut in half
- 3 cups cubed butternut squash
- 2 cups pecan halves
- 1 cup pepitas
- 1 cup dried cranberries
- Avocado Oil
- 1/2 cup Pure Maple syrup
- Salt and pepper to taste
Directions:
- Preheat oven to 375 degrees F. Line a large baking sheet with parchment paper.
- Place prepared brussel sprouts, squash cubes, pecan halves, and pepitas in a large bowl. Drizzle with avocado oil and toss until everything is lightly coated with oil. Salt and pepper the mixture and toss.
- Place vegetable mixture on the baking sheet and cook in the oven 30-40 minutes or until the squash is soft. About half way through, stir the mixture by turning it over with a spatula.
- Pour cooked mixture into a large mixing bowl. Add dried cranberries, and maple syrup. Toss very lightly. Add more salt and pepper to taste.
- Serve hot. Serves 6.
