October Full Moon Recipe

This is one of my favorite autumn season vegetable salads and it is a perfect dish for the “Moon”/Ovulatory phase.

Aries Full Moon Recipe:

Roasted Autumn Vegetable Salad

Ingredients:

  • 4 cups brussel sprouts trimmed and cut in half
  • 3 cups cubed butternut squash
  • 2 cups pecan halves
  • 1 cup pepitas
  • 1 cup dried cranberries
  • Avocado Oil
  • 1/2 cup Pure Maple syrup
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 375 degrees F. Line a large baking sheet with parchment paper.
  2. Place prepared brussel sprouts, squash cubes, pecan halves, and pepitas in a large bowl. Drizzle with avocado oil and toss until everything is lightly coated with oil. Salt and pepper the mixture and toss.
  3. Place vegetable mixture on the baking sheet and cook in the oven 30-40 minutes or until the squash is soft. About half way through, stir the mixture by turning it over with a spatula.
  4. Pour cooked mixture into a large mixing bowl. Add dried cranberries, and maple syrup. Toss very lightly. Add more salt and pepper to taste.
  5. Serve hot. Serves 6.
